Today is the Jewish festival of Purim - a day where the kids dress up and play games all day at school, we read the book of Queen Esther and how she saved the Jews from being exterminated in Persia. And like all Jewish festivals, food plays a central role! We eat these little triangle biscuits called hamentashen, which have many meanings. My favourite meaning is their representation of the triumph of good over evil. The world can sometimes seem filled with too much evil on all sides, and I like to believe that good will always prevail…and so will delicious yummy jam-filled triangle biscuits !
One of the ways I love extending the life of summer berries is simmering slightly-too-soft-to-eat berries  on the stove with whatever added flavour I feel like. It could be balsamic glaze, a dash of sumac, scraped vanilla bean pod or some star anise and cloves. This keeps in the fridge for ages and is perfectly combined with yoghurt or ice cream.
Nothing grabs my Monday-night cooking attention quite like a recipe that headlines ‘one pot pasta recipe’ as I immediately know it means very little time and very little washing up, but hopefully loads of flavour. Well this one-pot spinach, feta and dill pasta over delivered on all those promises. You know you have a winner when even your teenage son with a strong aversion to anything green is his pasta is wolfing down mouthfuls.
